Tandoori Potatoes

Potatoes cooked on a skewer

I wondered how small new potatoes would cook in the tandoor. The answer is “very well”. I’ve seen recipes for stuffed tandoori potatoes but I’ve never tried to make them. I thought I would start simple and just cook potatoes on skewers.

All I did was to take a number of smallish new potatoes (Jersey Royals in my case but Charlotte or Nicola or any other small, waxy potato would work the same way). I scrubbed and dried the potatoes and then pushed a few onto each skewer. I brushed them in olive oil then popped them into a hot tandoor for 15 minutes. They emerged golden and sizzling and were delicious eaten with Shish kebabs, Naan, yoghurt and salad.
